Easy Chicken Greek Salad Recipe Healthy Dinner Ideas

As it happens every year I officially pick up my new fitness and health goals the second week of January. I’m still technically coming off of a winter -sweets-and-carbs-hibernation. So I’m motivated again. Officially. That means healthy dinner ideas and more of an intentional diet.

I am very much a no fuss kind of cook. I do have to admit that when I do decide to cook, it can’t be something super complicated because I will immediately get lost and overwhelmed. I love, love, love simple, delicious, nutrition packed recipes and meals. And so when I do share my recipes on here, they are almost always easy and to the point that anyone can do on a busy schedule.

I thought I’d share one of my favorite low calorie meals that is pretty much everything I need in my life. Kick start the week with fresh, healthy dinner ideas, and more importantly uber simple Greek inspired salad. Have you ever had a Greek salad? If not you are totally missing out!

INGREDIENTS:

  • Cucumber
  • Cherry Tomatoes
  • Crumbled Gorgonzola Cheese
  • Black Pepper/ Seasonings
  • Olive Oil
  • Chicken Breast 3 oz

There’s not a lot to this recipe believe it or not. 

1. Start with grilling the chicken and add your favorite seasoning.  I use garlic powder.

2. While your chicken is cooking, chop up and slice the cucumbers. Do the same with the cherry tomatoes.

3. Once the chicken is done cut it up and toss that on the plate too.  Drizzle as much olive oil as you’d like. I like a lot.

4. Add some Gorgonzola cheeese or feta cheese. I prefer Gorgonzola because it melts in your mouth.

5. Lastly add some black pepper and mix everything up and bon appetite!
