You know as an avid Keto failure, I am always on the lookout for easy meal prep ideas. I have been on and off of Keto for quite a while now, but the one thing that has stayed pretty consistent have been the choices that I make for most of my meals. Staying on top of what I make at home is key, and that is because of my easy meal preps.
Easy Does It!
I am always and forever going to be a big fan of saving time in everything that I do…except for shopping. That’s for leisure…And when it comes to cooking that is no exception. Maybe I am just impatient or have the attention span of a chipmunk, but if the recipe is too complicated or too difficult…I’m probably not going to attempt to cook it at least not for my work week lunches.
I find that the hardest time for me to stick to healthier meal choices is in fact during the work week. It doesn’t exactly help that I have a penchant for sweets nor does it help that I sit around most of the day wondering what’s for lunch. In fact, when I don’t meal prep I tend to make choices that only leave me going very quickly down a junkfood spiral. I go overboard and yes it’s every single time I don’t meal prep. Mostly because in my head it only makes sense to bulk purchase my bad food choices. Seriously, do not give me anything in a package I will always consume the entire thing. Chocolate, chips, jelly beans… the list unfortunately goes on.
It’s All About Choices
I know, I know and yes you’re right I do lack some discipline, but it is all well within my control. Lacking discipline is acknowledged and yes it’s a choice. But so is deciding to practice some discipline. And that’s also a choice that we can make whenever we want to. See that’s the first step. Acknowledging. And once you do that, it’s out there and it’s information you can’t un-know, therefore anything you do after that is a choice. SO! Whenever you decide you want to have a healthful week or weeks like myself and you are in need of an easy meal prep lunch to take to work—then here you go!
This is by far the easiest thing I have probably ever made. It doesn’t really require much of a recipe at all but I’ll include it to make your life even easier.
Ingredients
- Boneless Chicken Breast
- 1 cup Green Beans (frozen)
- Cherry Tomatoes
- 1 Yellow Onion
- Garlic Powder
- Pink Himalayan Salt
- 2 Tablespoons of Olive Oil
Step 1: Prep
Cut up your chicken breast into cubes. It cooks faster this way. Chop up your onions.
Step 2: Sauté
Pour your olive oil into a skillet. Add the onions and let them sauté for approximately one minute. Add garlic powder and salt.
Step 3: Cook
Add your chicken breast to the skillet and cover with lid for approximately 10 minutes. Stir and add about a tablespoon of water then add the green beans and let cook for another 10 minutes. Add your cherry tomatoes to your bowl of deliciousness and Voilà you’re done!
I’m going to try and make these easy meal prep ideas a more regular post on my blog this year! I know they’re uber easy recipes, but being a working woman or man on the go, or even someone just trying to stick to low carb recipes—requires a little bit more ease. I mean honestly I don’t see anyone these easy meal prep ideas wouldn’t be great for! They also help me stay accountable to myself so really it’s a win win for everyone!
