Resourceful + Recipes
A recipe that calls for very minimal ingredients is pretty much right up my street. I am a self-appointed queen of easy cooking and minimal ingredient list recipe, I probably don’t have to tell you by now. This is perfect now that we’ve just been cautioned to stay away from grocery stores for the next couple of weeks. And because of the current quarantine situation we need to get creative in the kitchen. Oh and by the way if you don’t already subscribe to Tasty on YouTube you might want to, they always have the most creative videos and often times the ingredient list is minimal.
Lets Get Creative!
Lucky for me I come from an African mother who very being screams resourceful and creative cooking. Here’s an old recipe I shared a while back, but one that I have already made again and make quite often. It requires a minimal ingredient list, however you can add to it where you see fit. The most basic ingredients, the most delicious and healthy recipe you have to try tonight!
Thankfully on my last go at the grocery store, the shelves were stocked again! Funnily enough there seemed to always be an abundance of avocado at least in my experience. I guess Californians aren’t going all that crazy for the over priced fruit at the moment. I also managed to snag some ground turkey and with the seasonings I have at home, I’m pretty much ready to go.
Ingredients
Meat
450 g Ground Turkey
Produce
- 1/2 Avocado, peeled and cut into halves, ripe
- 5 cloves Garlic, roasted
- 2 Yellow onions
- 2 tbsp Parsley, fresh
Refrigerated
- 1 Egg
Condiments
- 2 tbsp Dijon mustard
Baking & Spices
- 1/2 tsp Salt
- 1/4 tsp Black pepper, ground
- In a small food processor (blender works fine too), add the garlic, onions, Dijon mustard , egg, salt, pepper, and process into a puree.
- Add that to a medium mixing bowl along with ground turkey, and parsley and knead well until blended.
- Using your hands (clean hands!) carefully put both avocado halves together and work the meat around them to completely encase it and form your meatball into a perfect sphere. At this point, if you’re like me, you can form just one large meatball as big as the size of your fist. Dinner for one!
- Place meatball in a small baking container and bake for 25-30 minutes.
- Serve without delay. That slice though!
