The Best Grain Free, Gluten Free,  Banana Pancakes

Today is a special treat because I’m going to share with you one of my latest and greatest gluten-free and grain-free recipes. This is the first of hopefully more AIP friendly recipes to come.

THE AIP CHALLENGE

Let me start by saying that I never thought I would be embarking on this latest diet. I call it a diet, but following an anti-inflammatory diet or autoimmune protocol (AIP) as it’s often referred to it’s really going to have to be a lifestyle change at this point. I may delve into why I decided to switch up my diet in a later post, but you may have noticed some of my previous posts referencing anti-inflammatory foods. Trying to eliminate any foods that could cause inflammation, moreover, means whatever I’m eating has got to be gluten-free, grain-free, dairy-free and basically free of all gums, sunflower oil, safflower oil, and the list goes on. This is like eating clean on another level because so many things can trigger inflammation. So to sum it up, it’s either elimination or inflammation your choice.

I have to be completely honest when I say that trying to go grocery shopping via AIP guidelines is incredibly frustrating. Literally just about everything that isn’t produce is pretty much garbage.  I do think I am a quick learner however, and feel pretty good about how I already feel pretty ahead of the game as far as what I am not allowed to consume. I am not only determined to find delicious and satisfying foods and recipes that don’t make this diet feel like a bummer. I think there is such a niche in this diet that has yet to be filled, so in the meantime let’s see what we can put together!

MAKE YOU BANANA PANCAKES

As a result of doing my own research and experiments I have already tried my hand at some pretty yummy concoctions and banana pancakes was one of them. I can’t really grasp the concept of not consuming indulgent foods because you know what is life without indulging? The true test has been finding recipes or meals that I could make gluten-free, grain-free and potentially dairy-free.

Let me introduce to you, the star of the show, Cassava Flour. Made from ground Cassava root it is one of the best substitutes for all-purpose flour that is both gluten-free and grain-free and paleo friendly. It’s wonderful for baked goods, pasta if you can believe that and best of all banana pancakes! In conclusion Cassava flour is a game changer for aip recipes! Check out my recipe down below and give a shot you will not be sorry! I’ve found my Sunday morning breakfast and I’m oh so happy!

INGREDIENTS

  • 1/3 Cup Cassava Flour
  • 1 Ripe Banana
  • Cashew Milk (Any Plant-Based Milk w/No Gum or Sunflower Oil)
  • 1 Tsp Vanilla Extract
  • 1/2 Tsp Baking Soda
  • 1/4 Tsp Cinnamon
  • 2 Eggs (or Flax Meal Dairy Free Substitute)
  • A Pinch of Sea Salt
  • Berries + Sliced Banana
  • Honey no more than 1 Tbsp
  • Combine all ingredients in a large bowl and whisk to fully combine, add more non-dairy milk if need be
  • Oil skillet with coconut oil
  • Cook on each side about 2-3 minutes or until golden brown
  • Add fruit and honey and voila!
