Low Carb Recipe For Zuppa Toscana

This low carb recipe is an amazing low carb soup alternative to Zuppa Toscana and if you’re an aspiring Keto-er it’s delicious and guilt-free! As I journey through the Ketogenic Diet, I’m going to try to post some low carb recipes as much as I can.

Ingredients

4 cups of riced cauliflower

2-3 tablespoons olive oil

Salt, pepper & garlic powder, taco seasoning 

1 celery stalk celery 

1 cup chopped parsley 

1  large yellow onion

5-6 cloves garlic, minced

8 cups chicken broth

1 cup heavy whipping cream

1 Tbsp cornstarch 

Instructions 

In a medium skillet, drizzle olive oil onto skillet and heat up. Add half of the chopped onions, minced garlic, black pepper, taco seasoning and ground turkey. Cook and crumble turkey mixture  until browned and cooked through.

Meanwhile in a medium stock pot add chicken broth, rice cauliflower, onions, parsley and celery. Cover and simmer over medium-low heat for 15 minutes. Add heavy cream and corn starch, stir to thicken. 

Taste for seasoning then add salt and pepper  if desired. Stir in cooked turkey mixture, cover, turn off heat and allow soup to rest for 10 minutes.
