Ingredients
400 g fresh spinach leaves
1/2 cup grated edam cheese
2 eggs large
Salt, Pepper
1 tablespoon dried oregano
Tomatoes
Instructions
Wash and drain the spinach leaves and remove the stems.
In a food processor or blender (I used a blender) pour the fresh spinach leaves and mix until it is finely minced – about 1-2 minutes.
Scoop the spinach out and place it in absorbent paper to squeeze the leaves until all the water is soaked (completely) Add the eggs, cheese, salt, and pepper.
Blend again for 30 seconds until it forms a thick mixture.
On a baking tray covered with a baking sheet transfer the spinach egg mixture.
Use your hands to form your pizza shape.
Bake at 200 C for 35 minutes or until it is well cooked like an omelette. Add the tomatoe slices for the last fifteen minutes as a topping or whatever topping you’d like.
Serve with a drizzle of virgin olive oil and voilà!
