Zucchini The Low Carb Game Changer

Who else here loves Italian food, but is trying to curb the weight gain factor and is looking for carb-heavy alternatives?! Me too. If you are also a zucchini lover, or are someone that has never cooked with zucchini–this is the low carb recipe for you!

Ingredients

Meat
1 lb Chicken or Turkey
Produce
1 red and yellow bell pepper
1 Onion, small
2 Zucchinis, medium
Baking & Spices
1 Salt and pepper

Dairy
Olive Oil or Butter
1/2 cup Half-and-half cream
1 cup Milk
1/3 cup Parmesan cheese, grated
3 Tbsp of flour

Well, I’m raising my hand. I love Italian food and pasta of course and have tried a few recipes that use veggie substitutes for those classic dishes we all love so much. Spinach crusted pizza. Eggplant lasagna. Mashed cauliflower to substitute mashed potatoes. I know mashed potato is not an Italian dish, but still.

I’ve wanted to try veggie noodles and luckily was gifted a sprializer for my birthday! I’ve been to get one forever and now that I got one, I wanted to test out a Zucchini noodle/pasta Alfredo alternative. It turned out amazing! So down below is my recipe enjoy!

In a large skillet over medium high heat, drizzle some olive oil or butter, your choice. I wanted this a bit lighter so I opted for olive oil. You can use chicken for this recipe but I sometimes prefer turkey as a great alternative. Add your meat, onion, chopped up bell peppers and saute for several minutes until your meat is fully cooked.

Next I like to add some flour to the pan and gradually introduce the half/half and a tad bit more olive oil. Once your skillet is ready to come down to a simmer, add salt and pepper and your zucchini noodles. I like my zoodles a little bit tender so I don’t cook it for too long. When I’m just about done I like to add some Parmesan cheese and voilá done!
