Healthy Ground Turkey Poached Egg Bowl

The holidays are over, but the struggle to slay the fat is all too real! Luckily eating fats is part of my repertoire these days and I must say I have been doing well…enough sticking to my Keto Diet. So I thought I’d show you a healthy ground turkey poached egg recipe that I’ve been loving lately.

Can’t Go Wrong With Healthy Ground Turkey Recipes

In my opinion, coming up with new on-the-whim recipes is all a part of the ketogenic process. Sure you can usually find a grocery list of things to buy on the diet, but I struggle to find recipes of substantial keto friendly meals. Therefore I have to get creative. Lately I’ve been obsessed with poached eggs. No joke I probably have this every single Saturday and maybe just about every other breakfast during the week. Here’s a recipe with the ever favorite staple: ground turkey.

Healthy ground turkey poached egg bowlIngredients

• 2 Tbsp olive oil, divided

• 1 large egg

• 1 small onion, diced (1 cup)

• 2 cups chopped bell pepper (any color)

• Salt and ground black pepper

• 1 lb lean ground turkey

• 2 cloves garlic, minced (2 tsp)

• 2 Tbsp taco seasoning

• 1 tsp ground cumin

• 1 medium avocado

• 1 cup finely shredded cheddar cheese

Instructions

1. In a sauce pan bring water to a boil then set to low heat. Crack the egg low into the sauce pan. Let cook for 3 minutes

2. In a skillet pour the olive oil in first then add ,garlic, onion and pepper and let sauté

3. Add the ground turkey and seasonings and let cool until golden brown

4. In a bowl add the cooked ground turkey , the poached egg and avocado cubes. Add salt to taste
