Healthy Pancake Alternative!

Here’s another quick and easy breakfast option when your craving something delicious and filling, but…healthy best of all! Banana pancakes are one of my favorite easy breakfast recipes and all it requires is 2-3 ingredients depending on your personal preference. This is my kind of recipe!




 

HEALTHY PANCAKE ALTERNATIVE!

Ingredients:

 

2 Eggs
1 large banana
1 tsp Cinnamon
1 Tbsp Coconut Flour

For a really simple recipe all you need is 2 eggs and 1 large banana. You can also add 1 tbsp of coconut flour to keep your pancakes more moist as coconut flour tends to retain moisture quickly. I also like adding a bit of cinnamon to give it a bit of flavor.

In a bowl add your two eggs, banana, cinnamon, coconut flour and mash it all up until you have a nice thick and running consistency. Using an lightly oiled frying pan or a griddle,turn your stove onto medium heat.

Pour or scoop a large dollop of your batter onto the frying pan. Remember because of the ingredients, these pancakes are going to be a bit more delicate and lighter than regular pancakes, so when you start to see the edges brown and the side facing up isn’t very runny–that’s a good indication that you are ready to flip the pancake over. When your pancakes are nice and golden brown plate them and add some fruit and light syrup if you prefer and bon appetit!
