So I’ve had a pretty busy week already which being a holiday week, I anticipated.  Luckily I actually had the foresight to make an easy, delicious, cheesy side dish for my work Thanksgiving luncheon. However,  I’m still working with a low carb diet and will be for a good while I’ve decided— aside from the cheat days. Shhhh!




I absolutely love this dish! Do not underestimate the deliciousness of the cauliflower. There are plenty of recipes out there with the use of cauliflower as a good low carb substitute—but this is probably my favorite. It’s a Cheesy-Garlicy-Cauliflower Bake! It’s takes about 10-15 minutes to prep and 30 to bake! It is all too easy, delicious and best of all healthy!  No one will be dissapointed with what you’re bringing to the table!

As you can see the star of the party is the cauliflower rice.  I know cooking cauliflower can be a bit sensitive, it doesn’t take very long to cook, but over do it and it becomes mush. So what I like to do is steam it in a rice cooker for about 10 minutes or so until it’s tender and a bit soft. In the meantime I’ll butter my baking pan. After that you are pretty much ready for baking!

INGREDIENTS
  • 3 Bags of Cauliflower Rice (Easiest)
  • Heavy Cream
  • Butter (I used Margarine)
  • Garlic Powder
  • Black Pepper
  • Salt
  • Pepperjack Cheese

 

 

Step 1:  Empty cauliflower rice bags into steamer, add some water and leave for 10 minutes.

Step 2:  Butter your baking pan. Keep a bowl of melted butter to the side.

Step 3:  Once cauliflower is done, preheat your oven to 400 degrees F.

Step 4:  Scoop out the first layer of the cauliflower rice, drizzle butter and heavy cream. Add seasoning. Continuing those steps until you’ve filled your baking pan.

Step 5: Add cheese and bake for 30 minutes!
