I realize that there are always healthier alternatives to the foods I love, but winter is typically the hardest for me to soldier through those choices and I’m sure it is for others with the mountains of pastries and sweets going around. So here is another low-carb recipe.
I’ve been wanting to try to make Keto friendly donuts for as long as I’ve been Keto. Let’s just say low-carb actually since I’ve failed many a times at sticking to the Ketosis diet. However, these low-carb recipes I post are more for those following a low-carb lifestyle and less about following restrictive diets. This donut recipe was one that I found online randomly, but I put my own spin on it. Hope you like it! If you decide to try it let me know what you think! The texture was absolutely perfect!
Ingredients
• 1/2 cup Coconut flour
• 1/4 cup honey or low-carb sweetener
• 1/4 cup Cocoa powder
• 3 Eggs medium
• 1/4 cup of Flax Meal
• 1/4 cup almond milk
• 1 Tablespoon Cinnamon
• 1/4 teaspoon Salt
• 1/4 teaspoon Baking soda
• 1 tablespoon Vanilla extract
Glaze
• 2 tablespoons Butter unsalted
• 1 tablespoon Cinnamon
• Honey
Instructions
•Preheat to 350F degrees.
•Mix the coconut flour, erythritol, cocoa flour, cinnamon, baking soda and salt.
•Add the eggs, coconut oil, coconut milk and vanilla extract and blend until you have no lumps.
•Fill the donut molds with the batter and bake for 20 minutes until firm.
•Remove and cool.
•Melt the butter and add the cinnamon and honey. Mix well.
•Dip the donuts into the cinnamon mixture. Add chopped walnuts for topping.
•Eat and enjoy!
