CHEDDAR BAY BISCUITS RECIPE ALERT!!

Hands down there is no better kind than Red Lobster’s Cheddar Bay Biscuits. I mean if you know, you know. So I totally had to recreate this, but with a low-carb recipe. If there is one thing that is super hard for me to stick to in this low-carb diet—it’s giving up bread. I absolutely love bread. I especially love delicious, cheesy bread. Even if you are following a low-carb recipe, you can still have fun with it and improvise with healthy low-carb ingredients.

RED LOBSTER CHEDDAR BAY BISCUITS (Keto Approved)

Cook time:  10 mins

Total time:  20 mins

Serves: 6

 

2 Net Carbs per biscuit/muffin



INGREDIENTS

• 2 large eggs

• 1/2 cup sour cream

• 4 Tbsp melted butter

• 1½ cups almond flour

• ¼ tsp salt

• 1 Tbsp baking powder

• 1 Tbsp black pepper

• 1 Tbsp garlic powder

• ½ cup sharp cheddar cheese, shredded

INSTRUCTIONS

1. Preheat oven to 450ºF

2. Butter your muffin pan with nonstick cooking spray and set aside.

3. Combine eggs, sour cream, and melted butter and whip until fully combined and lumps are gone. Set aside.

4. Combine all dry ingredients until fully incorporated. (Almond flour is the star player here)

5. Add wet ingredients to dry and mix just until combined.

6. Mix in cheeses.

7. Spoon batter evenly into the six greased muffin cups. Bake for 10-12 minutes, or until tops have risen and have started to brown.

8. Place hot muffin pan on a cooling rack until the muffins are cool enough to handle. Serve warm with butter, or transfer muffins to the cooling rack to finish cooling. Keep muffins in an airtight bag for storage.
