I’ve been going strong on a low-carb to no-carb game for a little bit now and it’s been great, but every once in a while I crave something hearty. If you noticed on my blog, I’m all about giving you guys some of my short and sweet tips even when it comes to healthy recipes! So here is hearty zucchini recipe.
Zucchini Boat
This is one of my favorite quick and easy low-carb dish to make because it is so delicious, so filling and leaves me satisfied and guilt free.
Ingredients
Ground Turkey
1 Large Zucchini
Onion
Garlic
Olive Oil
Salt /Pepper
1 Bell Pepper
Instructions
STEP ONE: Preheat oven to 400 degrees F. Slice the zucchini in half, and carve them out with a spoon into a bowl. I like to use them scooped out in the meat mixture so I set it aside. Place the zucchini boats in a baking pan, lightly oil, salt and pepper for taste. Stick it in the oven for 15 min.
STEP TWO: Heat up some olive oil in a non-stick skillet in the meantime. Start with cooking some onions for until they turn golden. Add your garlic, zucchini pulp, salt, pepper and the bell pepper at the end when the meat is nearly cooked. Simmer about 10 minutes.
STEP THREE: Take the boats out and place the meat mixture into zucchini boats and top each with a drizzle of cheese. Bake for another 5 minutes or until the cheesy is melted. Bon appetite!
