Decadent Low Carb Avocado Brownie Dessert

As an avid dessert lover and low carb recipe enthusiast, I thought I would share one of my favorite low carb desserts that doesn’t compromise indulgence in the slightest bit.

I always say this and it is still true. December is the hardest month to try and stick to a healthy low carb lifestyle. At least it is for me! Which is why it’s my favorite month to experiment especially with deserts. Ever since I was a kid I’ve associated December with deserts and cookies and ice cream and chocolate. That’s been my vibe for years. But lately my vibe has been make it tasty, but healthy and low carb.

How To Make A Brownie Healthy

A healthy and low carb dessert is great for two reasons, health and over indulging. I am definitely an over indulging type of desert eater and probably will be until my last days on earth. Therefore, if I can make a dessert that is not only nutritious, but won’t kick me out of ketosis, then amazing!

So today’s low carb blogmas special dessert is the Avocado Brownie. While you may be a bit skeptical at the thought of combining avocado and chocolate, trust me you won’t be sorry. This is one dessert you never saw coming and best of all it takes no time at all, just grab your food processor and get ready to blend!

Ingredients

  • 2 Medium Avocados
  • 2 Large Eggs
  • 1/4 Cup Almond Butter
  • 1/2 Cup Cacao Powder
  • 3 Tbsp Coconut Oil
  • 1/4 Cup Walnuts
  • 1/2 Cup of Coconut Sugar
  • 1/4tsp Baking Soda
  • 1 tsp Vanilla

How to Make Avocado Brownies

  1. Preheat your oven to about 350 ºF and lay some parchment paper over an appropriate sized baking dish.
  2. In your blender or food processor combine your avocados (without the pit or peel), eggs, coconut sugar, almond butter, cacao powder and vanilla.
  3. Once everything is nice and blended and your walnuts into the batter. Do not blend.
  4. Pour your batter onto your baking sheet and bake for about 30 minutes. Use a toothpick to make sure your brownies are no longer wet.
  5. Voila! Grab some milk and you’re ready to eat these decadent and delicious low carb avocado brownie!

      The avocado is absolutely untraceable! You just have to make sure it’s all blended well in the batter 🙂
